Recipes Using Guava

French Toast with Guava Sauce

(serves 4)
4 slices Hawaiian Sweet Bread
2 C milk
1 tsp sugar
1 vanilla bean
4 egg whites
4 whole eggs
1 lemon grated skin
1/4 C guava puree
Unsalted butter

Guava sauce
1/4 C Guava puree
1/4 C water
1/4 C sugar
2 tsp lemon juice

1. Mix milk, sugar, vanilla, egg white, whole egg, grated lemon zest and 1/4 cup guava puree.
2. Lay bread in a deep cooking pan and pour in the mixture. Wrap and refrigerate for 30 minutes.
3. Coat pan with unsalted butter and lightly fry until golden brown.
4. Mix guava sauce ingredients and boil until sugar is dissolved.
5. Pour guava sauce over French toast or serve on the side.

Guava Terrine with Chocolate Sauce,
Fresh Berries and Macadamia Nut Biscotti

1 tsp Fresh lemon juice
2 C guava nectar
1 C heavy cream, whipped
1 tbsp sugar
5 leaves sheet gelatin

Over medium heat, warm the lemon juice, guava nectar and pre-soaked gelatin until gelatin is completely dissolved. Let cool to room temperature. Whip cream with sugar, fold into the cooled guava mixture, and pour into terrine mold. Chill and remove guava filling then slice the guava terrine finger thick. Place on a late. Arrange some berries around the terrine slice, drizzle chocolate sauce over the berries and serve with macadamia nut biscotti and sprig of fresh mint.

Chocolate sauce
1 C water
1 C sugar
1/2 C semi sweet chocolate
1 tbsp cocoa

Bring the water and sugar to boil. Add the cocoa and semi-sweet chocolate, cool.
